How To 301 Redirect Root Domain and Subfolder separately via .htaccess?

I am trying to migrate a Wordpress blog and am a bit stuck on my 301 redirects. Here's what I'm trying to accomplish:

old-domain.com redirects to new-domain.com

AND SEPARATELY:

old-domain.com/subfolder redirects to new-domain.com/subfolder

I am planning to delete the original Wordpress installation, so the Redirection plugin would not be an option.

I've tried several different configurations of .htaccess and have been able to successfully redirect everything to new-domain.com OR everything to new-domain.com/subfolder – but I can't seem to figure out how to split it in two.

Is there anyone here who would be willing to nudge me in the right direction or provide me with a Rewrite snippet that can help me reach my goal?
